What for the visitors of Prospekt Shopping Mall are ready to give up home-made dumplings and borshch?
Weekend asked chefs, directors, baristas and waiters of catering facilites with Ukrainian, European, Italian, Pan-Asian, Japanese and Chinese cuisines about the habits of their guests, unusual orders and favorite customers.

- The concept of the food outlet is quick orders to let people eat tasty and useful food without harmful elements,  to have a snack. Our objective is to provide people with healthy food. We have a mixed cuisine with a focus on the Mediterranean and Italian food. 

Caesar Salad is a hit. Customers also enjoy our salads “Ocheano with Salmon” and “Marino with Mussels, Tuna and Baked Vegetables”. Our schtick is that every time we change our seasonal menu. Now we have a novelty which contains hummus.

Families usually order for children such a dish: pasta, a cucumber, a tomato and a chicken. We do not have a separate children's menu, but we can always make a dish that an adult or a child wants. Kids also order ravioli with rabbits and vegetarian soups. 

We have a very interesting insight of orders which boys and girls make. Guys most often order a light salad, and girls a filling carbonara deluxe. Besides, guys order more desserts than girls.

Our client is a usual office employee, who comes to have a snack and does not want to wait long.
Often we have customers who know exactly what they are going to order. There are also visitors who can make their choice after looking at a menu for a half a minute. Sometimes visitors who think for a long time sit at the table looking at the menu for 10 minutes.
There is no big difference between an outlet at the food court and a restaurant. In restaurants, people can stay longer in a cozy atmosphere, spend there an hour and a half. On foods courts, everything happens much faster - order, cooking, eating. However, in Prospekt food court there are nice places to sit.
At lunch time and on weekends, when we have many visitors and respectively, a lot of orders, the waiting time for an order makes 15-17 minutes. When we are not busy - 5-7 minutes.
It is not unusual when a guest orders carbonara de luxe, adds seafood and fish, leaving bacon, mushrooms and mushroom sauce. It is very strange to me, because I do not understand how pork can be mixed with salmon and mushrooms. However, this is the customer's wish, if he/she likes it - why not? We often have foreign guests: Hindus, Koreans, Vietnamese, and, in general, many visitors come from Asia. We definitely do not know why our guests from Asia choose us, perhaps because we offer delicious and fast food.
Unlike other facilities on Prospekt foodcourt we bring food fast and make it healthy - minimum calories, no fried products, etc. My favorite food here is carbonara deluxe.
